As bars phase out their bourbon-heavy winter cocktail menus, we're giddy to see tequila, gin and rum making their seasonal debuts. But along with those staples, bartenders are introducing other, less familiar warm-weather spirits to the mix. This is the summer of mezcal, pisco and rhum agricole, a trifecta of trending liquors that may even shake us of our margarita habit this spring. We talked to some of these spirits' biggest fans - bartenders themselves - to find out why they can't wait to introduce Chicago drinkers to a taste of the tropics.

There's nothing wrong with these trends in dining, but lately, I've been craving something different. That's when Masa Azul caught my attention. Promising Southwestern spice and lots of tequila, this clean-cut little storefront opened earlier this week on the border of Logan Square and Avondale.

La Cuchara 1521 W. Madison St. 312-291-9344 Rating:  !! (out of four)  Give it some time What's a restaurant's website for if not to stoke your appetite? La Cuchara's definitely features some appealing claims that fueled my anticipation, but upon arrival, the real-life restaurant didn't quite live up. A location "perfectly nestled in Chicago's  West Loop " is apparently PR speak for a strip mall neighboring  Dunkin' Donuts  and Subway. The bi-level space has two bars and a glassy facade with a prime view of ... the parking lot out front.

Remember Tila Tequila? Maybe? To refresh your memory she was the tiny woman who had the MTV reality show "Shot at Love," a "Bachelorette"-style show with men and women. In an increasingly strange turn of events, Tequila has defended Hitler in a series of blog posts, according to The Hollywood Reporter. In one post she writes, "What do you think war is about? People DIE in wars that is why I am against wars … I understand the Jewish people went through some shit too, but hey guess what?

At a high-end cocktail bar, everything from glassware to garnishes adds extra detail to your drinks. It's no surprise, then, that ice is the next frontier. The Aviary blew minds when it opened in 2011 with its alcohol-filled ice orbs, and now bartenders across the city are pushing the limits of what can be frozen into water. But these stunners are more than just a pretty embellishment: Flavored ice adds new tastes and aromas to cocktails as the cubes melt, making the last sip of your drink quite different than the first.

Takito Kitchen 2013 W. Division St.  773-687-9620 Rating:  !!!! (out of four)  Already hot Since opening about a month ago in the former Sabor Saveur space in Ukrainian Village, Takito Kitchen has tried to shine in an already taco-saturated neighborhood. Setting the casual-but-stylish restaurant apart is chef David Dworshak, formerly of Carnivale, and an intriguing cocktail list of tequila- and rum-based concoctions that are as colorful as the spray-painted mural on the rear wall.

Could it be the Big Star effect? While Paul Kahan's ridiculously popular Wicker Park taco-and-whiskey garage was a novelty when it opened more than three years ago, the idea of the casual Mexican-inspired bar is catching on. River North's Ay Chiwowa (311 W. Chicago Ave. 312-643-3200), Rockit Ranch's trendy take on a taqueria, and Wicker Park's High Noon Saloon (1560 N. Milwaukee Ave. 773-227-9339), a Tex-Mex sports bar, both have opened within the past six weeks with plenty of tortillas and tequila to go around.
