Mercadito's Patricio Sandoval opens a new restaurant this fall at the Talbott, but through summer he takes over the hotel's bar and patio with this pop-up spot featuring Latin-influenced American dishes including brick chicken with serrano-potato hash ($14.50-$19.50) and—in true pop-up style—a revolving cocktail menu. 6:30 a.m.-10:30 p.m.

Browse, buy and test-drive more than 100 boats—including luxury yachts, sailboats, flyboards and performance crafts—when the inaugural Chicago In-Water Boat Show cruises into town for four days of on-the-lake fun including free boat rides, hands-on boating courses and Caribbean live music. A tree that crashed during a Chicago storm lives on as core material in more than 40 furniture and accessory pieces from a student design competition in "Idea Tree," the featured installation in the Chicago Loop Alliance's Pop Up Art Loop gallery walk, which also includes a Romare Bearden 100th birthday exhibition, a comics-related show and more at five additional galleries. 5-8 p.m. Schedule: popupartloop.com.
